Homemade Bologna

I have had some requests for Croghan Bologna recipes, especially using venison.  Of course, the good folks in Croghan guard their recipe closely, but I do have one I found that works well.  You can use either venison or beef, and of course, tinker with it to your taste.  Give it a try:


1 cup water
1 1/2 to 2 tsp liquid smoke
2 tsp Mortons tender quick salt
1/2 tsp onion powder
1/2 tsp garlic powder
2 lb lean hamburger

mix all ingredients in a bowl and refrigerate for 24 hours.  Mix again.  Divide and make 2 rolls.
Place on broiler rack pan that has been sprayed with Pam.  Bake in oven at 300 for 1 hour & 15 minutes on
middle shelf.

I would probably add some pepper, but that is just me. Do a little test. Let’s say “Pepper to taste”.
